Marshmallow Chocolate Chip Banana Nut Muffins

Usually when I have bananas that have become overly ripe I'll make banana bread, but this time I thought I'd forgo the traditional route.  I came across this recipe and made it my own with the addition of chocolate chips and mini marshmallows.  The result was a super moist muffin with different, delicious textures in every bite.

Mixed Berry-Oat Muffins

These muffins are not only super delicious, but they are actually healthy for you.  I was inspired by Candice Kumai's Raspberry-Oat muffin recipe from her cookbook Pretty Delicious, which you may have seen in this post.  Instead of just using raspberries I used frozen mixed berries which came in handy since berry season is now sadly behind us.  I also used 100% white whole grain flour which I purchased at Trader Joe's.  Can't remember the last time I was so looking forward to breakfast.
{spread with a little Brummel & Brown to keep it healthy.  Yum!}

Food Porn of The Week: Zucchini, Carrot, & Apple Muffins

I bumped into this recipe while looking through cookbooks at Barnes and Noble.  The flavor combination sounded so good to me that I decided to make it for our Father's Day brunch.  I must say these were quite delicious.  Even my non-veggie eating husband liked them.  Of course I didn't mention they had veggies until he finished eating one of them. Here is the recipe.  Just an FYI I added about 1/4 cup of sweetened shredded coconut and used golden raisins.
{strawberry preserves were a wonderful touch}
