Peanut Butter & Jelly Cookies

I am a huge fan of peanut butter, but was never really a fan of peanut butter cookies.  This recipe has given me a change of heart.  It requires no flour so the result is a light cookie full of the classic flavors of a peanut butter and jelly sandwich, only way better!  In honor of Valentine's Day I made the traditional thumbprint into a heart by crisscrossing my thumb.  When packaged in these little boxes from Martha Stewart they make a perfect gift for your Valentine(s).  Hope you have a beautiful day full of love!

Triple Layer Cookie Bars

 When I noticed this recipe only consisted of six ingredients I was sold immediately.  It is no fuss, super simple and full of big taste.  All the yummy goodness of a graham cracker, coconut macaroon, and peanut butter cup are combined to create the ultimate cookie. AMAZING!

Food Porn of The Week: Nutter Butter Truffles

Peanut butter and chocolate has to be one of my favorite combinations EVER.  So, when I saw this recipe for Nutter Butter Truffles on Bakerella I had no choice, but to make them ASAP.  The beauty of this recipe is that there is no baking or measuring required at all.
The only ingredients you need are a package of Nutter Butter cookies, an 8oz bar of cream cheese and some chocolate bark.  I had semi sweet chocolate chips on hand so that is what I used instead.
These were pretty rich.  You can only eat about two or three.  I think next time I will try to mix in some actual peanut butter with the cream cheese.

Food Porn of The Week: Chicken Satay

This recipe is perfect for an outdoor get together. The chicken tastes great thanks to a marinade consisting of fresh lemon juice and thyme, but the sauce, oh the sauce! It is so good you could eat it on its own, not that I have ever tried (wink, wink). One time I took a spoonful of the sauce and thinned it out with some rice wine vinegar and canola oil and it turned into this delicious peanut dressing.
