So, I am in two weddings this year and I need to get myself together. Those dressing room mirrors and florescent lighting are the devil I tell you. As you may already know I am a fan of smoothies as seen here. I need to bring my smoothie game to the next level especially since I need to wear two bridesmaids dresses. That being said I present to you my Beet Berry Smoothie:
2 cups unsweetened coconut almond milk1 cup frozen mixed berries
1/3 cup diced beets (roasted or steamed)
1/2 cup chopped kale
1/2 cup spinach
1 - 2 tablespoons honey
1 tablespoon coconut oil
1 tablespoon chia seeds
Place all of the ingredients in a blender and blend for 1 full minute. Pour into a glass and enjoy. Don't you feel healthier already?

Green Detox Smoothie
I find this smoothie makes for the perfect fresh start after a weekend full of not so many healthy choices. Case in point the Doritos Locos Tacos at Taco Bell. Don't judge people, they were amazing. I mean a Dorito taco shell, hello!? Anyway, back to the subject at hand. Leafy greens such as spinach are rich in chlorophyll, which is believed to purify the blood and cleanse the body. This is one of the hubster's favorite smoothies and he is anti-veggie so that says a lot! Here's what I used, but you can switch it up any way you would like:
one healthy handful of baby spinach
a cup of fresh pineapple
1 tablespoon of ground flaxseeds
1 tablespoon of chia seeds
1 teaspoon of freshly grated ginger
11.4oz of coconut water
Blend all ingredients with a few ice cubes and that's that.

Salted Pistachio Lassi
The other night my sister-in-law, Mari and I took our first hot yoga class. The experience was traumatizing yet completely invigorating when all was said and done. I am actually going back for another session tonight. Anyway, the point of my story is that when I got home I didn't really want to eat anything too hearty. I decided to do a take on this salty/sweet lassi. This high protein, low fat smoothie definitely hit the spot. Here's my version...
1 cup Greek yogurt
1/4 cup almond milk
1/2 teaspoon freshly grated ginger
2 tsp agave nectar
1/4 cup roasted and salted pistachios
Place the pistachios in a food processor and pulse until the are fairly fine. Remove about two teaspoons of the pistachios and set aside.
Add the remaining ingredients to the food processor and blend until well-combined.
Serve over ice, if desired and top with the reserved pistachios.
Makes two servings

Scenes From The Weekend
That was fast, but I really cannot complain because I had another great weekend where I...
scored this beautiful blouse for $15 from the clearance section at Marshall's
wore my birthday dress to go on a hot date with the hubbs
made a delicious and healthy smoothie for breakfast. Fresh mango, almond milk, and ground flax seeds were the only ingredients
got to spend some time with our adorable Godson, Josiah.
