I wanted my last recipe of the summer to be a crowd pleaser and truly celebrate the season. Freshly baked Snickerdoodle cookies sandwiched between French vanilla ice cream. If this yummy treat doesn't scream summer I don't know what does. When serving a little extra salted caramel drizzled on top doesn't hurt. Check out the semi-homemade cookie recipe here and the salted caramel recipe here. When baking the cookies I suggest baking them for about 9 minutes to make sure they stay nice and chewy. Now do you really think I will wait until next summer to whip up another batch of these? ...I didn't think so.

The ripe, juicy peaches I purchased at the farmer's market got me thinking...I have never made a peach dessert! I didn't want to go with the obvious choice of peach cobbler. So, when I saw this recipe the fact that I did not have to make the dough from scratch instantly won me over. At the end of a long day at work making pie crust just doesn't fit in my schedule. The addition of almond paste gives this galette an additional layer of flavor. Serve warm with a generous scoop of French vanilla bean ice cream for the ultimate summer dessert.
When I saw this recipe being made by the fabulous Marcela Valladolid I knew I had to try it. I couldn't think of a better way to make use of our freshly picked strawberries. This strawberry meringue cake, aka mostachon incorporates Maria cookies which instantly take me back to my grandmas house when I was a little girl. The delicious frosting tastes like a very light cheesecake. When topped with fresh berries it's basically a piece of summer by the slice.
