Healthy Thought: Avocado Chia Chocolate Pudding


 I have a lot of healthy recipes “pinned” to my HealthyThoughts board on Pinterest.  (feel free to follow me here)  This is another pin worthy one I came up with as I have been seeing a lot recipes for desserts utilizing avocado.  I’m kind of hooked so you will definitely be seeing more of these kinds of recipes in the future.
This delicious chocolate pudding gets its rich creaminess from heart healthy avocado.  You might be put off by the sound of chocolate and avocado in the same sentence, but trust me it’s  good!  So good in fact that Chris couldn’t even tell there was any in there.  Enjoy as a healthful snack or even for breakfast. 

Ingredients:
1 ripe avocado, peeled and diced

2 Tablespoons unsweetened cocoa

1/2 oz 70% dark chocolate, melted

1/2 cup light canned coconut milk

½ tablespoon chia seeds

2 Tablespoons honey

1 teaspoon vanilla extract

Optional toppings: ground flax seeds, whipped cream, strawberries
 

Directions
Place all ingredients in blender, blend until smooth.

Eat as is or top with ground flax seeds, a touch of whipped cream and strawberries.

Serves 2

Homemade Peanut Butter Cups

Chocolate and peanut butter anything are my kryptonite.  A Reese’s peanut butter cup is almost always hard to resist.  I decided to give making this homemade version a try.  I used a plastic mold as well as mini cupcake liners, both yield great results.  To make these goodies Valentine’s Day appropriate I decorated them with jumbo sized heart sprinkles.  For the peanut butter lover in your life fill up a mini mason jar with these goodies and add some Valentiney pizazz.  Now, who besides people with severe peanut allergies would not love this as a gift?!

Triple Layer Cookie Bars

 When I noticed this recipe only consisted of six ingredients I was sold immediately.  It is no fuss, super simple and full of big taste.  All the yummy goodness of a graham cracker, coconut macaroon, and peanut butter cup are combined to create the ultimate cookie. AMAZING!

Food Porn of The Week: Nutter Butter Truffles

Peanut butter and chocolate has to be one of my favorite combinations EVER.  So, when I saw this recipe for Nutter Butter Truffles on Bakerella I had no choice, but to make them ASAP.  The beauty of this recipe is that there is no baking or measuring required at all.
The only ingredients you need are a package of Nutter Butter cookies, an 8oz bar of cream cheese and some chocolate bark.  I had semi sweet chocolate chips on hand so that is what I used instead.
These were pretty rich.  You can only eat about two or three.  I think next time I will try to mix in some actual peanut butter with the cream cheese.
