Coconut Sorbet

 We had this really delicious coconut sorbet during our weekend getaway.  I was left craving it so I came up with a recipe and made my own version.  All I used was a can of cream of coconut and a package of frozen grated coconut. 

Directions are as follows:
Chop the frozen grated coconut to about the size of ice cubes.
Add the cream of coconut and chopped frozen grated coconut to a blender and blend until thouroughly mixed.
Line a loaf pan with plastic wrap and fill with coconut mixture.
Pop into the freezer and stir every half our for about 3 - 4 hours
Serve and indulge!

As mentioned last week, Chris and I were going on a mini vacation this weekend.  We tried our best to enjoy it to the fullest by doing as much as we could in the little time we had.  I think we most definitely were successful in that!  Here are a few photos.  I hope to share a little video with you by the end of the week ; )

Eye Candy of The Week

Happy Friday! I'm feeling extremely giddy right now. Chris and I are taking a very mini vacay this weekend. We purchased an awesome deal on LivingSocial for a one night stay at the Hotel Indigo East End. We hope to visit the beach and some wineries. I'll update you guys on Tuesday. In the meantime, summer is officially here and there is nothing I want more than to ride my bike. These fabulous ladies sure know how to make going for a bike ride a fashionable occasion. DIY: At Home Facial

{Step 1: Remove Makeup}
I have tried various makeup removing wipes, but I always find myself coming back to these Boots #7 wipes I buy at Target. Ponds cold cream does a great job of removing any excess eye makeup.
As much as I'd love to go the spa and get a facial every week, my wallet does not allow for such great luxuries. This is my personalized at home facial routine that I try to commit to at least once a week. The products featured work for me, but you may have to personalize according to your skins needs (dry, acne prone, sensitve, etc). So, go ahead and pamper yourself!
{Step 2: Open pores & Cleanse}
I wet a washcloth with hot water and place it over my face for about a minute. This helps to open up your pores. Next I cleanse with Liquid Neutrogena. I find this works really well and doesn't over dry my skin.
{Step 3: Exfoliate}
You may have seen this gentle exfoliator from Lush in this post. This gives my skin a smooth finish without being too harsh.
{Step 4: Purify}
I just recently purchased this facial mask by Freeman and I love it. It really helps with blackheads and minimizes pores.
{Step 5: Moisturize}
I am a huge fan of coconut oil. Not only does it smell great, but it truly is the perfect natural moisturizer. I use Vaseline to moisturize my lips and under my eyes.

Peach and Almond Galette

 The ripe, juicy peaches I purchased at the farmer's market got me thinking...I have never made a peach dessert!  I didn't want to go with the obvious choice of peach cobbler.  So, when I saw this recipe the fact that I did not have to make the dough from scratch instantly won me over.  At the end of a long day at work making pie crust just doesn't fit in my schedule.  The addition of almond paste gives this galette an additional layer of flavor.  Serve warm with a generous scoop of French vanilla bean ice cream for the ultimate summer dessert.

Scenes From The Weekend

Sometimes the best moments are unplanned. That was the theme for this past weekend. We went to support our good friend, Then One at his first solo art show in Philly. We planned on taking the 2+ hour drive back home that night, but decided last minute to stay at The Rittenhouse 1715 a charming boutique hotel. We're so glad we did. Philly truly is a welcoming city that always makes us feel right at home. To see our last trip to Philadelphia click here. The rest of the weekend included a baby shower, Sunday morning mass, a delicious brunch at my sister-in-law's house, a couples massage and a delicious Cuban dinner. It was a very eventful weekend to say the least.

DIY: Clutch Makeover

You may have noticed I have an affinity for making old things new as seen here and here. Again, I found myself contemplating getting rid of an old "jelly" clutch that is about 7 or 8 years old. Instead I got my creative wheels turning and decided to give it a little makeover. For this re-vamp I used:

Martha Stewart Satin finish Craft paint in Wild Salmon
A small roller
Paint tape
pyramid studs
 jewelry pliers
scissors
First I cleaned off the clutch, then painted it. Three coats should be enough. Once completely dry I added the studs. I am contemplating adding more studs, but I am still trying to re-gain feeling on my fingertips ; )

Green Detox Smoothie

I find this smoothie makes for the perfect fresh start after a weekend full of not so many healthy choices. Case in point the Doritos Locos Tacos at Taco Bell. Don't judge people, they were amazing. I mean a Dorito taco shell, hello!? Anyway, back to the subject at hand. Leafy greens such as spinach are rich in chlorophyll, which is believed to purify the blood and cleanse the body. This is one of the hubster's favorite smoothies and he is anti-veggie so that says a lot! Here's what I used, but you can switch it up any way you would like:

one healthy handful of baby spinach

a cup of fresh pineapple

1 tablespoon of ground flaxseeds

1 tablespoon of chia seeds

1 teaspoon of freshly grated ginger

11.4oz of coconut water
Blend all ingredients with a few ice cubes and that's that.

The result is a super refreshing smoothie that will probably wake you up better than a cup of coffee.
