Summer 2012

This weekend consisted of some R&R at the beach with my family, a home cooked meal by my hubbs, quality time with my niece and nephew among other things. Here are a few snaps of my weekend...

Baked and Wired

As much as I enjoyed seeing all the historical sights of DC I must say my favorite part of our little trip was driving into Georgetown. Seeing the colonial style apartments and houses was a little like traveling back in time. There were also an array of restaurants, bakeries, bistros, and shops to choose from, but I knew exactly were I wanted to go - enter Baked and Wired. This super charming cupcake shop/coffeehouse is a must for those craving impeccable coffee and amazingly delicious cupcakes and baked goods. I decided to go with The Flap Jack - a brown butter, maple infused cupcake with maple icing and candied bacon (yes, bacon). Chris decided on a classic coconut cupcake. They were both PERFECT. Generously sized, not too much frosting, not dry, just all around amazing. I could kick myself for not buying some to bring home.  If and when I'm around town again I will definitely be back!

Washington, D.C.

Chris and I took a quick little trip to Washington DC on Sunday. He had never been and I had once before when I was about 8 years old. There is definitely a ton to see and do. Despite the rain, we made the most of our mini visit. Here are a few photos, video to come later this week ; )

Mamey, French Vanilla, Passion Fruit Popsicles

 As we dwindle down to the last few weeks of summer I find myself wanting to indulge in the foods of the season; ice cream, froyo, fresh fruits and veggies to name a few. Enter these popsicles. I toyed with the idea of using purees from two of my favorite tropical fruits mamey (pronounced ma-may) and passion fruit. The creamy French Vanilla yogurt middle brought both flavors together quite nicely. Here is what you will need:

Popsicle molds or paper cups and wooden sticks
7oz of Mamey pulp (available in the frozen section of your supermarket)
7oz of Passion Fruit pulp
1.5 cups of French Vanilla Lowfat Yogurt
1tsp vanilla extract
Honey to sweeten
Defrost the pulps in separate bowls add honey to sweeten to your liking.
Add vanilla extract and a squeeze of honey to yogurt.
Layer mamey, yogurt, and passion fruit pulp into popsicle molds and freeze for at least eight hours.
Enjoy!

I'm happy to say that I survived my first kick boxing class! It was definitely an excellent stress reliever. The fun continues tonight! On another note this weekend consisted of a kitchen nightmare, attending a baby shower, celebrating a 30th bday, watching Shark Week, and the Olympic closing ceremonies. How amazing did the Spice Girls look, btw?? Here are a few of the weekend's highlights...

Florida

 My sisters, niece and I took a trip to Florida last week to visit our dad.  It was awesome to get to spend some time together.  There was fun in the sun, yummy eats and lots of laughs.  Check out last year's trip here...
