The ripe, juicy peaches I purchased at the farmer's market got me thinking...I have never made a peach dessert! I didn't want to go with the obvious choice of peach cobbler. So, when I saw this recipe the fact that I did not have to make the dough from scratch instantly won me over. At the end of a long day at work making pie crust just doesn't fit in my schedule.
