Pumpkin Pie Bars

 In celebration of Thanksgiving I decided to make one last pumpkin dessert.  This recipe is pretty genius if I do say so myself.  It consists of a press in shortbread crust, a creamy pumpkin filling, and then here comes the genius part...the crust doubles as the crumble topping!  OK some of you may not find that very exciting, but I thought it was pretty awesome.  These were delicious and absolutely perfect for any Thanksgiving get together.

Pumpkin Cream Cheese Muffins

It's October and do you know what that means? It means you need to start consuming massive amounts of pumpkin everything. Pumpkin coffee, pumpkin ice cream, pumpkin cheese cake, pumpkin pancakes, pumpkin flan, you get the picture. That being said these pumpkin cream cheese muffins definitely fit the bill. I wanted to try out the coconut flour I purchased this weekend so I used some of that in combination with whole wheat flour. These are basically a taste of fall in every bite. Just in case you were wondering I enjoyed one of these for breakfast with a pumpkin latte and was in total heaven.
