Mamey, French Vanilla, Passion Fruit Popsicles

 As we dwindle down to the last few weeks of summer I find myself wanting to indulge in the foods of the season; ice cream, froyo, fresh fruits and veggies to name a few. Enter these popsicles. I toyed with the idea of using purees from two of my favorite tropical fruits mamey (pronounced ma-may) and passion fruit. The creamy French Vanilla yogurt middle brought both flavors together quite nicely. Here is what you will need:

Popsicle molds or paper cups and wooden sticks
7oz of Mamey pulp (available in the frozen section of your supermarket)
7oz of Passion Fruit pulp
1.5 cups of French Vanilla Lowfat Yogurt
1tsp vanilla extract
Honey to sweeten
Defrost the pulps in separate bowls add honey to sweeten to your liking.
Add vanilla extract and a squeeze of honey to yogurt.
Layer mamey, yogurt, and passion fruit pulp into popsicle molds and freeze for at least eight hours.
Enjoy!

I'm happy to say that I survived my first kick boxing class! It was definitely an excellent stress reliever. The fun continues tonight! On another note this weekend consisted of a kitchen nightmare, attending a baby shower, celebrating a 30th bday, watching Shark Week, and the Olympic closing ceremonies. Zucchini Ricotta Fritters

On a trek to the farmer's market last week I picked up some zucchini since it's at it's peak of freshness right now. Instead of baking up a batch of these I decided upon this savory recipe. These light as air, little puffs of zucchini goodness were perfection. They’re super easy to throw together and even better to eat. I paired mine with a simple mixed green salad and a squeeze of fresh lemon juice. Dinner, made so easy.

Skirting the Issue

Sunday was H-O-T...HOT! Hair up and something easy, breezy to wear was a necessity. Enter the tube dress my sister-in-law gave me. It shrunk in the wash so with a little knotting action the makeshift maxi skirt was born. Wonder if I can transform the shrunken dress into anything else...

What a week this has been! Needless to say I am thrilled that it's finally Friday. It's the beginning of August, so I really want to enjoy these last few weeks of summer. Kind of crazy how fast it goes, no? That being said I hope to ride my bike, possibly spend some time poolside, and prepare some dishes using fresh ingredients straight from the farmer's market.
